
Formerly known as La Bourgeoise, the ES-56 may be ripe but remains focused and light-bodied. Thanks to the flint-rich soils in this part of Sancerre, the wine offers excellent tension and a spicy drive on the finish. While the fruit is ripe, it's savory and restrained, having been partially fermented in oak (25%) before resting in the cellar for close to two years before release.
