A blend of Chenin Blanc, Grenache Blanc, Clairette Blanche, Viognier, Verdelho, Roussanne, Marsanne, Semillon Gris, Semillon Blanc, Palomino, Colombard, Grillo and Assyrtiko from 17 vineyards across Paardeberg, Piketberg and St Helena Bay, on weathered granite, sandstone and coastal limestone soils. Whole-bunch pressed, then fermented in concrete eggs and clay amphorae – each vineyard in its own vessel. Matured for 12 months in those vessels, followed by 12 months in large old foudres.
