
The 2020 Sauvignon Blanc is fermented wild in French oak foudres, with a portion of full-skins contact. This is a cool wine, because it is wild, textural and flavorsome yet packaged in a restrained, classy, elegant way. A wine that shows skin contact and Sauvignon Blanc work very well indeed—it grinds down the sweet pea character that is achieved so easily in Margaret River and replaces it with a curl of dehydrated orange zest, enoki mushroom and citrus pith.
